Banana Nut Bread

  • Ingredients

    • ½ cup white sugar

    • ½ cup packed brown sugar

    • ½ cup butter, softened

    • 2 large eggs

    • 1 teaspoon vanilla extract

    • 1 teaspoon lemon juice

    • 1¾ cups all-purpose flour

    • 1 teaspoon baking soda

    • 1 teaspoon baking powder

    • ½ teaspoon salt

    • ½ cup sour cream

    • 1 cup mashed ripe bananas

    • ½ cup chopped walnuts

    Instructions

    1. Preheat the oven to 350°F (175°C). Grease a 9 × 5-inch loaf pan.

    2. In a large bowl, cream the softened butter, white sugar, and brown sugar until light and fluffy.

    3. Beat in the eggs one at a time. Mix in the vanilla and lemon juice, then the sour cream and mashed bananas.

    4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

    5. Gently stir the dry ingredients into the banana mixture just until combined. Fold in the walnuts.

    6. Transfer the batter to the prepared pan and smooth the top.

    7. Bake for about 1 hour, until a toothpick inserted into the center comes out clean or with a few moist crumbs, but no wet batter. If the top browns too quickly, loosely tent it with foil.

    8. Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
